A French delicacy and garden gem in one! 'Violet de Provence' is a magnificent artichoke with large, violet-tinged flowers that are both edible and decorative . The petals have a mild, nutty flavor and can be enjoyed cooked with butter or vinaigrette.

The plant grows large and stately – perfect as a solitary plant in the kitchen garden or as an ornament in the flowerbed . Thrives in a sunny and nutrient-rich location, preferably with regular watering for the best harvest.
