Angelica
Latin name: Archangelica officinalis ( Angelica archangelica )
Angelica is an impressive and historic perennial herb with large, lobed leaves and globular, yellow-green flowers. The plant is known for its medicinal properties and aromatic flavor. The leaves, stems, roots and seeds can be used in cooking, for example in herbal teas, pickles, liqueurs and baked goods.

Cultivation tips:
- Angelica seeds need a cold period (stratification) to germinate – sow them outdoors in the fall or chill them in moist sand in the refrigerator for 4–6 weeks before sowing.
- It can take up to a year for the seeds to germinate.
- Thrives in humid environments and can be grown near streams or ponds.
Uses: Stems can be candied or used in desserts, leaves are used in teas, seeds in spice blends, and the roots have traditionally been used in herbal medicine.
